Method

Preparation

  1. 1

    Marinate the Steak

In a bowl, combine olive oil, kosher salt, black pepper, paprika, cayenne pepper, garlic powder, onion powder, and dried thyme. Mix well to form a marinade.

  2. 2

    Coat the Skirt Steak

Place the skirt steak in a resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring it is completely coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or overnight for best results.

Cooking

  1. 3

    Preheat the Grill or Skillet

Preheat your grill or a cast-iron skillet over high heat until it is very hot.

  2. 4

    Cook the Steak

Remove the skirt steak from the marinade, allowing excess marinade to drip off. Place the steak on the hot grill or skillet. Cook for about 3-4 minutes on each side for medium-rare, or until desired doneness is achieved.

  3. 5

    Add Bleu Cheese

During the last minute of cooking, sprinkle bleu cheese crumbles generously over the steak. Close the grill lid or cover the skillet to allow the cheese to melt slightly.

Serving

  1. 6

    Rest and Slice

Once cooked to your liking, remove the steak from the heat and let it rest for 5 minutes. Slice against the grain into thin strips.

  2. 7

    Serve

Serve the blackened bleu skirt steak immediately, garnished with additional bleu cheese if desired.
