    Prepare the Milk

    Heat the whole milk in a large pot over medium heat until it reaches about 85°F (29°C). Stir gently to prevent scorching.

    Add the Acid

    Once the milk is heated, remove it from the heat and slowly add the white vinegar or lemon juice while stirring gently. Let it sit for about 5-10 minutes to curdle.

    Add the Rennet

    Dissolve the rennet in a small amount of cool, non-chlorinated water. Add the rennet to the curdled milk and stir gently for about 30 seconds. Let it sit undisturbed for 5-10 minutes until the curds form.

    Cut the Curd

    Once curds have formed, cut them into small cubes using a long knife. Let the curds rest for another 5 minutes.

    Cook the Curds

    Heat the curds gently over low heat, stirring occasionally until they reach a temperature of 105°F (40°C). This will help them firm up.

    Drain the Curds

    Once cooked, pour the curds into a colander lined with cheesecloth to drain off the whey. Rinse the curds gently under cool water.

    Transfer the curds to a bowl and sprinkle with salt. Toss gently to combine and adjust the salt to taste.
