Prepare Glass & Garnish
Chill and garnish
Choose a tall Collins or highball glass. Fill the glass about three-quarters full with large ice cubes or crushed ice. Add the cucumber slices and gently press them against the inside of the glass with a bar spoon so they sit along the side for visual appeal. Tuck one or two mint sprigs into the glass.
Mix Drink
Measure and combine spirits
In a mixing glass or shaker filled with a few ice cubes, pour 2 oz Pimm's No.1 and 1 oz gin. Stir gently for 10–15 seconds just to chill and lightly dilute; do not vigorously shake—this is a tall, lightly carbonated cocktail.
