Prepare glass and mint

Choose a large wine glass or stemmed glass. Add the fresh mint leaves to the bottom of the glass. Gently clap the mint between your palms (or lightly bruise with a spoon) to release aroma but avoid shredding the leaves. Reserve one nice mint sprig for garnish.

Add lime and St-Germain

Pour the fresh lime juice into the glass over the muddled mint. Add the St-Germain elderflower liqueur. If you prefer a sweeter cocktail, add the optional simple syrup now (about 1/4 oz).

Add ice

Fill the glass with large ice cubes or crushed ice up to the top. Large cubes melt slower and keep the drink from diluting too quickly.

Top with sparkling wine and soda

Slowly pour the dry sparkling wine (Prosecco or brut) into the glass, followed by the club soda or sparkling water. Pour gently to preserve bubbles and to blend ingredients without stirring vigorously.

Lightly stir and garnish

Give the cocktail one or two gentle stirs with a bar spoon to combine the liqueur, lime, and sparkling components without flattening the bubbles. Garnish with the reserved mint sprig tucked into the glass and a lime wheel on the rim.

Serve

Serve immediately while the drink is cold and effervescent. Optionally provide a straw for sipping but serving without allows the aroma of mint to come through more strongly.
