Method
Base Preparation
- 1
Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Whisk together until well combined.
- 2
Mix Wet Ingredients
In a separate bowl, whisk together the milk, eggs, melted unsalted butter, and vanilla extract until smooth.
- 3
Combine Mixtures
Slowly pour the wet ingredients into the dry ingredients, stirring gently until just combined. Do not overmix; a few lumps are okay.
- 4
Preheat Oven
Preheat your oven to 350°F (175°C) and grease a baking dish or line it with parchment paper.
- 5
Bake
Pour the batter into the prepared baking dish and smooth the top. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Topping Preparation
- 6
Prepare Berries
While the base is baking, wash and prepare the fresh berries. Slice strawberries if using, and set aside.
- 7
Whip Cream
If you’re making homemade whipped cream, whip the cream until soft peaks form. Sweeten with sugar if desired.
- 8
Assemble
Once the base has cooled, cut into squares or slices. Top each piece with a generous amount of berries, a dollop of whipped cream, and garnish with mint leaves.
