Method

Steak Preparation

  1. 1

    Season the Steak

Pat the ribeye steaks dry with paper towels. Rub both sides with olive oil, then season generously with salt and black pepper.

  2. 2

    Sear the Steak

Heat a skillet over high heat until very hot. Add the steaks to the skillet and sear for 4-5 minutes on one side until a golden crust forms.

  3. 3

    Flip and Add Aromatics

Flip the steaks over, add crushed garlic cloves and rosemary sprigs to the skillet. Cook for another 3-4 minutes for medium-rare or longer to reach desired doneness.

  4. 4

    Rest the Steak

Remove the steaks from the skillet and let them rest on a cutting board for at least 5 minutes before slicing.

Fries Preparation

  1. 5

    Prepare the Potatoes

Peel the russet potatoes and cut them into thin strips about 1/4 inch thick.

  2. 6

    Soak the Fries

Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

  3. 7

    Heat the Oil

In a deep pot, heat the vegetable oil to 350°F (175°C).

  4. 8

    Fry the Potatoes

Drain the soaked potatoes and pat them dry. Carefully add the potatoes to the hot oil in batches, frying for 5-7 minutes until they are golden and crispy.

  5. 9

    Season the Fries

Remove the fries from the oil and drain on paper towels. While still hot, sprinkle with salt and paprika to taste.
