In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

In a large mixing bowl, combine the sautéed spinach mixture, crumbled feta cheese, beaten eggs, chopped dill, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Preheat your oven to 180°C (350°F). On a clean surface, lay out the package of phyllo dough and cover it with a damp cloth to prevent it from drying out.

Spoon the spinach filling along one long edge of the layered phyllo dough, leaving about an inch margin at the edges. Roll the phyllo dough over the filling to create a log shape, tucking in the ends as you go.

Transfer the rolled spanakopita to a baking sheet lined with parchment paper. Brush the top with additional melted butter and cut it into diagonal slices to allow steam to escape.
