Preparation of Acidified Pineapple

In a shaker, combine the pineapple juice and lime juice. Add simple syrup to balance the acidity. Shake well.

Strain the mixture into a separate glass to remove any pulp or solids.
Mixing the Drink

Combine Base Ingredients
In a cocktail shaker filled with ice, combine the Bahnez mezcal, gentian liqueur, and guava coconut rum.

Add Acidified Pineapple
Pour the strained acidified pineapple mixture into the shaker with the base ingredients.

Shake vigorously for about 15-20 seconds to chill and combine the ingredients.

Rim a chilled cocktail glass with sugar by running a lime wedge around the rim and then dipping it into sugar.

Garnishing
