Rice Preparation

Rinse the Rice
In a fine mesh strainer, rinse the long grain white rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and the water is absorbed.

Melt the Sugar
In a medium saucepan over medium heat, add the granulated sugar and cook, stirring constantly until the sugar melts and turns a deep amber color.

Add Butter
Once the sugar has melted, carefully add the unsalted butter and stir until melted and combined.

Incorporate Cream
Slowly add the heavy cream while stirring continuously. Be cautious as the mixture will bubble up. Stir until smooth.

Finish the Sauce
Remove from heat and stir in the vanilla extract. Allow the caramel sauce to cool slightly.
Assembly

Combine Rice and Caramel
In a serving bowl, layer the fluffy rice and pour the warm caramel sauce over the top.

Sprinkle the chopped nuts over the caramel rice, and add a sprinkle of sea salt if desired.
