Cooking Pasta

    Boil the Pasta

    In a large pot, bring water to a boil. Add a pinch of salt. Once boiling, add the pasta and cook according to package instructions until al dente. Drain and set aside.

Preparing Vegetables

    Chop the Vegetables

    While the pasta is cooking, wash and chop the bell peppers, zucchini, carrots, and broccoli into bite-sized pieces.

    Halve the Cherry Tomatoes

    Halve the cherry tomatoes and set aside.

Making the Sauce

    Heat the Olive Oil

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

    Add the Vegetables

    Add the chopped vegetables (bell peppers, zucchini, carrots, and broccoli) to the skillet. Sauté for about 5-7 minutes until they are tender but still crisp.

    Add Broth and Season

    Pour in the vegetable broth and season with salt and black pepper to taste. Let it simmer for about 3-5 minutes.

    Mix in Pasta and Cheese

    Add the cooked pasta to the skillet, tossing it with the vegetables and broth. Stir in the grated Parmesan cheese until melted and combined. Adjust seasoning if necessary.

    Remove from heat and stir in the chopped fresh basil before serving.
