Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 220°C (425°F) and prepare four ramekins by greasing them with butter and dusting with flour.

  2. 2

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water (double boiler method) or in the microwave in 20-second intervals, stirring until smooth.

  3. 3

    Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar and large eggs until the mixture is pale and slightly thickened.

  4. 4

    Combine Mixtures

Slowly add the melted chocolate and butter mixture to the egg mixture, stirring continuously until fully combined.

  5. 5

    Add Dry Ingredients

Sift the all-purpose flour, vanilla extract, and a pinch of salt into the chocolate-egg mixture. Gently fold the dry ingredients into the wet ingredients until just combined.

Baking

  1. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

  2. 7

    Bake the Cakes

Place the ramekins on a baking tray and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center remains soft.

Serving

  1. 8

    Cool and Serve

Let the cakes cool for 1 minute, then carefully invert each ramekin onto a plate. Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream.
