Prepare the Bread
Preheat your oven to 400°F (200°C). Slice the baguette or Italian bread into 1/2-inch thick slices.

Toast the Bread
Arrange the bread slices on a baking sheet and brush one side with 2 tablespoons of olive oil. Toast in the preheated oven for about 5-7 minutes, or until golden brown and crispy.

Prepare the Tomato Mixture
While the bread is toasting, chop the ripe tomatoes into small dice and place them in a mixing bowl.

Add Basil
Chop the fresh basil leaves and add them to the bowl with the tomatoes.

Season the Mixture
Minced the garlic clove and add it to the tomato and basil mixture. Drizzle with 1 tablespoon of olive oil, and sprinkle with salt and black pepper. Toss everything gently to combine.

Add Mozzarella
Cut the fresh mozzarella into small cubes and gently fold into the tomato mixture.

Assemble the Bruschetta
Once the bread is toasted, remove it from the oven. Top each slice with a generous spoonful of the tomato and mozzarella mixture.

Serve
Drizzle the bruschetta with a little more olive oil if desired, and serve immediately while the bread is still warm.
