Chocolate Sponge Base

Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

Mix Dry Ingredients

In a mixing bowl, sift together the flour, cocoa powder, baking powder, and salt.

Whisk Eggs and Sugar

In another bowl, whisk the eggs and granulated sugar until the mixture is pale and fluffy.

Combine Mixtures

Gradually fold the dry ingredients into the egg mixture, then add melted butter and vanilla extract.

Bake the Sponge

Pour the batter into the prepared cake pan and bake for 25-30 minutes. A toothpick inserted should come out clean.

Cool the Sponge

Let the sponge cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Chocolate Mousse

Melt Chocolate

Chop the dark chocolate and melt it in a double boiler or microwave until smooth. Let it cool slightly.

Whip Cream

In a separate bowl, whip the heavy cream until soft peaks form. Set aside.

Beat Egg Whites

In another bowl, beat the egg whites until foamy. Gradually add granulated sugar and continue to beat until stiff peaks form.

Combine Chocolate and Cream

Gently fold the melted chocolate into the whipped cream until well incorporated.

Incorporate Egg Whites

Carefully fold in the whipped egg whites into the chocolate mixture until no white streaks remain.

Chill Mousse

Spoon the mousse into serving cups or on top of the cooled sponge base. Refrigerate for at least 2 hours to set.

Prepare the Glaze

In a small saucepan, heat the heavy cream until just simmering. Remove from heat and add chopped dark chocolate.

Mix Until Smooth

Stir until the chocolate is completely melted and mixture is smooth.

Glaze the Mousse

Once the mousse has set, pour the chocolate glaze over the mousse and let it drip down the sides.

Chill Again

Return the mousse to the refrigerator for an additional 30 minutes to allow the glaze to firm up.
