Method
Making the Pistachio Gelato
Prepare Pistachios
Soak the pistachio nuts in water for at least 4 hours or overnight to soften them.
Blend Ingredients
In a blender, combine the soaked pistachios and milk. Blend until smooth, then strain through a fine mesh sieve to remove any solids.
Heat Cream and Sugar
In a saucepan, heat the heavy cream and sugar over medium heat until the sugar dissolves. Do not let it boil.
Cook the Mixture
Return the combined mixture to the saucepan and cook over low heat, stirring constantly until it thickens enough to coat the back of a spoon.
Chill the Mixture
Remove from heat, add the pistachio puree and vanilla extract. Stir well, then chill the mixture in the refrigerator for at least 4 hours or until completely cold.
Churn the Gelato
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
Freeze the Gelato
Transfer the gelato to an airtight container and freeze for at least 4 hours or until firm.
Coating the Truffles
Melt the Chocolate
In a microwave-safe bowl or double boiler, melt the dark chocolate along with coconut oil (if using) until smooth and glossy.
Scoop Gelato
Using a small ice cream scoop, scoop out small balls of the chilled pistachio gelato and place them on a parchment-lined baking sheet.
Dip in Chocolate
Dip each gelato ball into the melted chocolate, ensuring they are completely coated, and return to the baking sheet.
Garnish
Sprinkle chopped pistachios on top of each chocolate-coated truffle before the chocolate sets.
Freeze Again
Place the baking sheet in the freezer for at least 30 minutes to let the chocolate harden.
