Method

Preparation

  1. 1

    Sauté the Base Ingredients

In a large pot, heat olive oil over medium heat. Add diced onion, minced garlic, diced carrot, and diced celery. Sauté for about 5-7 minutes until the vegetables are softened and the onion is translucent.

  2. 2

    Add Tomatoes and Broth

Stir in the canned diced tomatoes (with their juices) and vegetable broth. Bring the mixture to a simmer.

Cooking the Soup

  1. 3

    Incorporate Beans and Spices

Add the black beans, kidney beans, smoked paprika, cumin, chili powder, salt, and black pepper to the pot. Stir well to combine all ingredients.

  2. 4

    Simmer the Soup

Reduce the heat to low and let the soup simmer for about 20-25 minutes, allowing the flavors to meld together. Stir occasionally.

Serving

  1. 5

    Serve the Soup

Ladle the soup into bowls. Garnish with chopped fresh cilantro and serve with lime wedges on the side for squeezing over the soup.
