Preparation

    Prepare the Saffron

    In a small bowl, soak the saffron threads in 2 tablespoons of warm broth for about 10 minutes to release their flavor and color.

    Chop the Vegetables

    Finely chop the onion, garlic, and red bell pepper. Dice the tomatoes and set aside.

Cooking

    Heat the Oil

    In a large paella pan or a wide skillet, heat the olive oil over medium heat.

    Sauté the Vegetables

    Add the chopped onion, garlic, and red bell pepper to the pan and sauté for about 5 minutes until softened.

    Add the Rice

    Stir in the Bomba rice and cook for another 2 minutes, allowing the rice to absorb the flavors.

    Add Liquids and Seasonings

    Pour in the broth, soaked saffron with its liquid, paprika, salt, and pepper. Stir well to combine.

    Simmer the Rice

    Bring the mixture to a boil, then reduce the heat to low. Cover the pan and let it simmer for about 15 minutes, or until the rice is almost tender.

    Add Seafood

    Gently fold in the shrimp, mussels, calamari, and white fish. Cover again and cook for an additional 5-7 minutes, or until the seafood is cooked through and the mussels have opened.

    Add Peas

    Stir in the green peas and let them heat through for about 2 minutes.

    Garnish and Serve

    Remove from heat, let it sit for a few minutes, then garnish with chopped parsley and lemon wedges before serving.
