Preparing the Mahi-Mahi

    Marinate the Fish

    In a bowl, mix olive oil, lemon juice, garlic powder, paprika, salt, and black pepper. Add the mahi-mahi fillets and coat them evenly. Let marinate for at least 15 minutes.

    Grill the Fish

    Preheat your grill to medium-high heat. Place the marinated mahi-mahi fillets on the grill and cook for about 4-5 minutes on each side or until the fish is cooked through and flakes easily with a fork.

Cooking the Vegetable Toppings

    Sauté the Vegetables

    In a skillet, heat a tablespoon of olive oil over medium heat. Add the sliced onion, bell pepper, and mushrooms. Sauté for about 5-7 minutes or until the vegetables are soft and slightly caramelized. Season with a pinch of salt and pepper.

Assembling the Sandwich

    Assemble the Cubana

    Slice the Cuban bread rolls in half. Place a grilled mahi-mahi fillet on the bottom half of each roll. Top with the sautéed vegetables and a slice of Swiss cheese. Place the top half of the roll over the cheese.

    Optional Grilling

    For a crispy finish, you can optionally grill the assembled sandwich for an additional 2-3 minutes on the grill or in a panini press until the cheese is melted and the bread is toasted.
