Preparing the Filet Mignon

    Season the Meat

    Pat the filet mignon dry with paper towels. Rub each piece with olive oil, then season generously with salt and black pepper on all sides.

    Sear the Filet

    Heat a skillet over medium-high heat. Once hot, add the seasoned filet mignon to the skillet. Sear for 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Remove from skillet and let rest.

Making the Sauce

    Deglaze the Pan

    In the same skillet used for the filet, add the red wine to deglaze, scraping up any browned bits from the bottom of the pan. Cook for 2-3 minutes until slightly reduced.

    Add Broth and Butter

    Add the beef broth to the skillet and bring to a simmer. Reduce heat and add butter and fresh thyme. Stir until butter is melted and sauce is slightly thickened.

Serving

    Plate and Serve

    Slice the filet mignon if desired and place on a serving plate. Drizzle with the prepared sauce and serve immediately.
