Method
Roast Pork

Prepare the Marinade
In a bowl, combine minced garlic, orange juice, lime juice, oregano, cumin, salt, and black pepper to create a marinade.

Marinate the Pork
Place the pork shoulder in a large dish and pour the marinade over it. Cover and refrigerate for at least 4 hours, preferably overnight.

Roast the Pork
Preheat the oven to 325°F (165°C). Place the marinated pork in a roasting pan and roast for about 3-4 hours, or until the internal temperature reaches 190°F (88°C). Let it rest before slicing.
Boliche

Prepare the Stuffing
In a bowl, mix minced garlic, green olives, diced onion, and diced red bell pepper.

Stuff the Beef
Make a lengthwise cut in the beef roast and stuff it with the garlic-olive mixture. Season the outside with salt and black pepper.

Cook the Boliche
In a large pot, heat oil over medium heat and sear the stuffed beef on all sides. Add bay leaves and beef broth. Cover and simmer for about 2-3 hours until the beef is tender.
Empanada de Picadillo

Prepare the Filling
In a skillet, heat olive oil over medium heat. Sauté diced onion, minced garlic, and diced green bell pepper until softened. Add ground beef and cook until browned. Stir in tomato sauce, raisins, salt, and pepper. Cook for an additional 5 minutes.

Fill the Empanadas
Place a spoonful of the filling on one half of each empanada dough disc. Fold over and crimp the edges to seal.

Fry the Empanadas
Heat oil in a deep pan over medium heat. Fry the empanadas until golden brown on each side. Drain on paper towels before serving.
Platanos

Peel the ripe plantains and cut them into thick slices.

Heat oil in a deep pan over medium heat. Fry the plantain slices until golden brown on both sides. Drain on paper towels before serving.

Prepare the Yuca
Peel the yuca root and cut it into chunks.

Cook the Yuca
In a large pot, boil salted water and add the yuca chunks. Cook until tender, about 20-25 minutes. Drain and serve.
Yellow Rice

Cook the Rice
In a pot, combine rice, chicken broth, turmeric, garlic powder, and salt. Bring to a boil, then cover and reduce heat to low. Cook for about 20 minutes until rice is tender and liquid is absorbed.
