Chicken Preparation

Marinate the Chicken
In a bowl, mix olive oil, garlic powder, paprika, salt, black pepper, and lemon juice. Add the chicken breasts and coat them well. Let it marinate for at least 30 minutes.

Cook the Chicken
Heat a skillet over medium heat. Add the marinated chicken breasts and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest.

Sauté Vegetables
In a large saucepan, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and bell pepper, sauté for about 4-5 minutes, or until softened. Add the minced garlic and sauté for an additional minute.

Cook the Rice
Stir in the rice, cumin, salt, and black pepper, and cook for 2-3 minutes, allowing the rice to toast slightly. Add the chicken broth and tomato sauce to the pan. Bring to a boil.

Simmer
Once boiling, reduce the heat to low, cover, and let it simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
