    Prepare the Chicken

    Cut the chicken thighs into bite-sized pieces and season with salt, black pepper, and paprika.

    Soak the Saffron

    In a small bowl, soak the saffron threads in a couple of tablespoons of warm chicken broth to release their flavor.

Cooking

    Heat the Oil

    In a large paella pan or skillet, heat the olive oil over medium heat.

    Cook the Chicken

    Add the seasoned chicken to the pan and cook until browned, about 5-7 minutes. Remove the chicken and set aside.

    Sauté the Vegetables

    In the same pan, add the chopped onions and garlic. Sauté for 2-3 minutes until the onions are translucent.

    Add Peppers

    Stir in the chopped red and green bell peppers and cook for another 3-4 minutes.

    Add Rice and Broth

    Stir in the basmati rice, then pour in the chicken broth and the saffron mixture. Bring to a boil.

    Combine Chicken and Simmer

    Return the browned chicken to the pan, reduce the heat to low, cover, and simmer for 20 minutes until the rice is cooked and has absorbed the broth.

    Add Peas

    In the last 5 minutes of cooking, sprinkle the frozen peas on top of the paella without stirring.

    Fluff the paella with a fork and serve hot with lemon wedges on the side.
