Black Bean Cakes
1. Prepare the Black Beans
In a mixing bowl, mash the cooked black beans until smooth. You can use a fork or a potato masher. Leave some chunks for texture.
2. Sauté Aromatics
In a skillet over medium heat, add a tablespoon of oil. Once hot, add the minced garlic and chopped shallots. Sauté for about 3-4 minutes until they are translucent and fragrant.
3. Combine Ingredients
In the bowl with the mashed black beans, add the sautéed garlic and shallots, shredded Monterey Jack cheese, shredded cheddar cheese, beaten eggs, salt, and black pepper. Mix until all ingredients are well combined.
4. Form the Cakes
Using your hands, form the mixture into patties, about 2-3 inches in diameter. Place on a plate and refrigerate for at least 30 minutes to help them hold their shape.
5. Fry the Cakes
In a large pan, heat the oil over medium-high heat. Once hot, carefully add the patties, frying in batches if necessary. Cook for 3-4 minutes on each side until golden brown and crispy. Remove and let drain on paper towels.
