Waffle Batter

    Preheat and prepare

    Preheat your waffle iron according to the manufacturer's instructions. Lightly brush or spray the plates with the butter or nonstick spray.

    Mix dry ingredients

    In a medium bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt until evenly combined.

    Mix wet ingredients

    In a separate bowl, whisk the egg until lightly beaten. Add the milk, melted butter, and vanilla extract; whisk until combined.

    Combine batter

    Pour the wet ingredients into the dry ingredients and stir gently until just combined. The batter should be slightly lumpy — do not overmix. Let the batter rest for 5 minutes while you prepare the compote (this improves texture).

    Cook waffles

    Spoon or pour the recommended amount of batter for your waffle iron (usually 1/2 to 3/4 cup for a standard iron). Close and cook until golden and crisp, about 3–5 minutes depending on your iron. Transfer finished waffles to a warm oven (200°F / 95°C) on a rack so they stay crisp while you finish cooking the rest.

Mixed Berry Compote & Fresh Fruit

    Cook compote

    Place the mixed berries, 2 tablespoons sugar, lemon juice, and 2 tablespoons water in a small saucepan over medium heat. Stir occasionally and bring to a gentle simmer. Cook 6–8 minutes, breaking down larger berries with the back of a spoon, until the mixture thickens slightly and becomes saucy. If you prefer a smoother compote, mash with a potato masher or pulse briefly with an immersion blender.

    Adjust sweetness and cool

    Taste and add up to 1 tablespoon more sugar if you prefer it sweeter. Remove from heat and let the compote cool slightly; it will thicken more as it cools. Reserve warm or at room temperature.

    Prepare fresh fruit

    While the compote cooks, slice the banana and combine the fresh strawberries and blueberries in a small bowl. Hold at room temperature so they are ready to top the waffles.

Toppings & Garnish

    Whip cream

    Chill a medium mixing bowl and beaters briefly if possible. Pour the whipping cream into the bowl with the 1 teaspoon confectioners' sugar and 1/4 teaspoon vanilla. Whip with a hand mixer or whisk until soft peaks form, about 2–3 minutes. Do not overbeat. Transfer whipped cream to a piping bag or bowl.

    Assemble waffles

    Place one freshly cooked waffle on a plate. Spoon 2–3 tablespoons of the warm mixed berry compote over the waffle. Fan several banana slices across the top and scatter a tablespoon of fresh berries (strawberries and blueberries). Dust lightly with powdered sugar (about 1/2 tablespoon per waffle). Drizzle with 1–2 tablespoons of maple syrup, and finish with a generous dollop or swirl of whipped cream on top.

    Serve immediately while waffles are still warm and crisp. Offer extra compote and maple syrup at the table.
