    Make hibiscus infusion

    Combine 1 cup dried hibiscus flowers and 4 cups water in a medium saucepan. Bring to a gentle boil over medium heat, then reduce heat and simmer 8 minutes to extract color and flavor.

    Remove from heat and stir in 1/2 cup sugar until dissolved. Let steep, partially covered, for 15 minutes to deepen flavor.

    Strain the infusion through a fine-mesh sieve or cheesecloth into a heatproof container. Press gently on the solids to extract liquid. Discard solids. Stir in 2 tablespoons fresh lime juice. Chill the concentrate in the refrigerator until cold (about 30–45 minutes) or use at room temperature if making immediately for serving over ice.

Ginger-Mint Syrup

    Prepare ginger-mint syrup

    In a small saucepan combine 1 cup water, 1/2 cup sugar, and 2 oz sliced fresh ginger. Bring to a simmer over medium heat, stirring until sugar dissolves.

    Simmer gently 6–8 minutes to infuse ginger flavor. Remove from heat, add 12 fresh mint leaves, and let steep 10 minutes off the heat (cover loosely).

    Strain the syrup into a jar, pressing on ginger to extract as much liquid as possible. Discard solids. Chill syrup before assembly, or use warm if you prefer a slightly warmer mix (adjust sweetness to taste). Yield: about 1 cup syrup.

Mixed Berries & Muddling

    Muddle berries

    Place 1 cup mixed berries in a large pitcher or mixing bowl. Add 2–3 tablespoons of the ginger-mint syrup (adjust to taste) and gently muddle with a wooden muddler or the back of a spoon until berries release juices but retain some texture (about 20–30 seconds).

    If you prefer a smoother drink, strain the muddled berry mixture through a coarse sieve, pressing to extract juices; reserve the strained berry bits for garnish or discard.

Assembly (pitcher for 4 servings)

    In the pitcher with the muddled berries, add the chilled hibiscus concentrate. For the amounts above use approximately 2 cups hibiscus concentrate (or to taste — this recipe yields a bright, floral base).

    Add 4 cups cold sparkling water and stir gently to combine. Taste and adjust sweetness by adding more ginger-mint syrup (1 tablespoon at a time). If making alcoholic, stir in 6 tablespoons vodka or light rum now (optional).

    Add 3 cups ice to the pitcher or fill individual glasses with ice. Pour the drink over ice, dividing evenly among 4 glasses.

    Garnish each glass with a fresh mint sprig, a lime wheel, and a few whole berries. Serve immediately.

Notes & Storage

    Leftover hibiscus concentrate and ginger-mint syrup keep covered in the refrigerator for up to 5 days. Assemble with sparkling water just before serving to preserve fizz.
