Spread 1½ tbs guacamole on one slice of sourdough and the remaining 1½ tbs on the other slice. Set aside.

Prepare chickpeas
Place the drained chickpeas in a bowl or shallow food processor. Pulse gently a few times until mostly mashed but still slightly chunky (not a smooth puree).

Stir in shredded carrot (½ cup), diced red bell pepper (¼ cup), sliced green onion, chopped parsley/cilantro, minced garlic, ground cumin, smoked paprika, lemon juice, salt, and black pepper.

Add the rolled oats (⅓ cup) and mix until the mixture holds together when pressed. If too wet, add another tablespoon of oats; if too dry, add ½ tsp water or ½ tsp olive oil.

Form the mixture into a single larger patty about the diameter of your sourdough slice (or two smaller patties). Press firmly so edges hold.

Transfer the cooked patty to a plate lined with paper towel to drain briefly.

Serves 1. To make 2 sandwiches, double ingredients and make two patties (cook in batches). Leftover patties keep refrigerated up to 3 days and reheat in a skillet for 2–3 minutes per side.

Adjust seasonings (salt, pepper, spices) to taste. For extra creaminess, add a thin slice of cheese or a spread of hummus under the patty.
