Bread & Spread

    Spread 1½ tbs guacamole on one slice of sourdough and the remaining 1½ tbs on the other slice. Set aside.

    Heat a skillet over medium-low. Add 1 tbs olive oil or a small pat of butter and toast the sourdough slices 1–2 minutes per side until golden. Remove and keep warm.

Chickpea & Veggie Patty

    Prepare chickpeas

    Place the drained chickpeas in a bowl or shallow food processor. Pulse gently a few times until mostly mashed but still slightly chunky (not a smooth puree).

    Stir in shredded carrot (½ cup), diced red bell pepper (¼ cup), sliced green onion, chopped parsley/cilantro, minced garlic, ground cumin, smoked paprika, lemon juice, salt, and black pepper.

    Add the rolled oats (⅓ cup) and mix until the mixture holds together when pressed. If too wet, add another tablespoon of oats; if too dry, add ½ tsp water or ½ tsp olive oil.

    Form the mixture into a single larger patty about the diameter of your sourdough slice (or two smaller patties). Press firmly so edges hold.

    Heat 1 tbs olive oil in a nonstick skillet over medium heat. Add the patty and cook 4–5 minutes per side until golden-brown and crisp. Reduce heat to medium-low if browning too quickly. Internal texture should be hot and set.

    Transfer the cooked patty to a plate lined with paper towel to drain briefly.

Fresh Vegetables & Assembly

    If you prefer carrot ribbons, use a peeler to shave the remaining ½ medium carrot into thin ribbons. Lightly season with a pinch of salt.

    On one toasted sourdough slice (with guacamole), layer spring mix (about 1 cup), a few carrot ribbons, 3 tomato slices, and 3 red onion slices.

    Place the warm chickpea & veggie patty on top of the vegetables. If using hot sauce, drizzle 1 tsp over the patty.

    Top with the other guacamole-spread sourdough slice, press gently, and cut in half if desired. Serve immediately.

Notes & Serving

    Serves 1. To make 2 sandwiches, double ingredients and make two patties (cook in batches). Leftover patties keep refrigerated up to 3 days and reheat in a skillet for 2–3 minutes per side.

    Adjust seasonings (salt, pepper, spices) to taste. For extra creaminess, add a thin slice of cheese or a spread of hummus under the patty.
