Fruit Base

Citrus-Honey Dressing

Method

Fruit Base

  1. 1

    Prepare strawberries

Rinse strawberries under cold water, hull and quarter them so pieces are bite-sized. Pat dry with paper towels to remove excess moisture.

  2. 2

    Prepare other fruit

Rinse blueberries and grapes. Halve grapes. Peel and dice the pineapple into roughly 1/2-inch pieces. Peel and slice kiwis into coin slices. Pat any wet fruit dry to avoid watering down the cups.

  3. 3

Combine fruit in a large bowl: add strawberries, blueberries, halved grapes, diced pineapple, and sliced kiwi. Gently toss with a large spoon to distribute evenly. Do not overmix to avoid crushing delicate berries.

Citrus-Honey Dressing

  1. 4

Whisk dressing: In a small bowl, combine fresh orange juice, fresh lemon juice, honey, lime zest, and kosher salt. Whisk until honey is fully dissolved and the mixture is slightly emulsified. Taste and adjust: add up to 1 tsp more honey if you prefer sweeter, or a pinch more salt to brighten.

  2. 5

Dress fruit gently: Pour the dressing over the mixed fruit and fold gently with a spatula until fruit is lightly coated. Use about half the dressing if you prefer fruit less shiny; reserve the rest for topping just before serving if making ahead.

Assembly & Garnish

  1. 6

Portion into cups: Divide the dressed fruit evenly among eight 16 oz cups (about 3/4 cup fruit per cup yields 8 servings; leaving room for garnish and to avoid overflow). Press gently to settle but do not compress.

  2. 7

Add garnishes: Top each cup with a few chiffonade mint leaves and a light sprinkle (about 1 teaspoon) of toasted shredded coconut if using. Tuck a lime wedge on the rim or inside each cup for optional extra acidity at service.

  3. 8

Chill or serve: If serving immediately, keep cups chilled on a tray with ice under it for 10–15 minutes. If making ahead, seal with lids and refrigerate for up to 24 hours. Before serving, stir gently to redistribute juices and add reserved dressing if fruit appears dry.

Packaging & Service

  1. 9

Label and transport: Snap lids on securely for to-go orders. Keep upright and cold during transport. Best consumed within 24 hours to maintain texture and fresh appearance.
