    Prep fruits

    Trim ends of the star fruit, slice crosswise into thin pieces and remove any tough edges. Peel and dice the mango into small cubes. Scoop the passion fruit pulp into a small bowl, including seeds and juice.

    Macerate (optional for more flavor)

    Combine the sliced star fruit and diced mango in a small bowl with the passion fruit pulp and the lime juice. Let sit 5–10 minutes to macerate so juices meld.

Liquid & Caffeine

    Measure the coconut water and chilled light cold-brew coffee. If using strong green tea as the light caffeine alternative, ensure it is well chilled. Adjust coffee volume to taste if you prefer more or less caffeine.

    In a blender or a high-speed jar, add the macerated fruit mixture and pour in the coconut water and the cold-brew coffee.

Sweetener & Blend

    Add the simple syrup (or agave) to the blender. Blend on low to medium speed for 8–12 seconds — just long enough to puree fruit but retain some fine texture and passion fruit seeds. Taste and add up to another 1/2 tsp syrup if more sweetness is desired.

Finish & Serve

    Fill a 12–16 oz serving glass with crushed ice. Pour the blended mixture over the ice, leaving room at the top for garnish. Gently stir once to integrate.

    Garnish with a mint sprig tucked to the side and a thin star fruit slice on the rim. Serve immediately with a straw.

    If preparing for multiple servings, scale ingredients and blend in batches to preserve texture; refrigerate blended mixture up to 2 hours but add ice just before serving.
