Prepare chicken
Pat the chicken breasts dry with paper towels. If breasts are very thick (over 1 inch), butterfly them or pound to an even thickness of about 1/2 to 3/4 inch to ensure even cooking.

Make marinade
In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, smoked paprika, ground cumin, kosher salt, and black pepper until combined.

Marinate
Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, making sure all pieces are coated. Seal or cover and refrigerate for at least 30 minutes and up to 4 hours. (Do not exceed 8 hours for best texture.)

Preheat grill
About 15 minutes before cooking, remove chicken from refrigerator to come toward room temperature. Preheat a gas or charcoal grill to medium-high heat (about 400-450°F / 200-230°C). If using a grill pan, heat it over medium-high on the stovetop and lightly oil the grates or pan.

Grill chicken
Place the chicken breasts on the hottest part of the grill. Cook uncovered 5-7 minutes on the first side without moving, until grill marks form. Flip and cook 4-6 minutes on the second side until an instant-read thermometer inserted into the thickest part reads 165°F (74°C). Exact time depends on thickness. If using thinner cutlets, reduce time accordingly.

Rest
Transfer the chicken to a clean plate and tent loosely with foil. Let rest 5 minutes to allow juices to redistribute.
