Method
Coffee Brew
- 1
Grind
Weigh 0.25 lb (approximately 113 g) of whole coffee beans. Grind to a medium-coarse consistency appropriate for batch drip brewing (similar to granulated sugar).
- 2
Measure water
Heat 1892 ml (64 fl oz) of filtered water to between 92–96°C (195–205°F). If using a kettle without temperature control, bring to a boil and let sit 30 seconds.
- 3
Set coffee-to-water ratio
Use a 1:17 coffee-to-water ratio by weight (about 113 g coffee to 1922 g water). For practical purposes with this recipe, use the measured 1892 ml water with the 113 g coffee for a slightly stronger brew suitable for serving in 8 cups.
- 4
Brew (batch drip)
Place a clean commercial drip brewer or an airpot-compatible batch brewer with a fresh paper filter. Add the ground coffee into the brewer basket, level it, and start the brew cycle so that hot water evenly soaks the grounds and drips into the thermal airpot or coffee box. Total extraction time for the batch should be about 5–6 minutes (throughput dependent on equipment).
- 5
Rest and transfer
When the brew cycle completes, allow the brewed coffee to sit in the thermal container for 1–2 minutes to stabilize. Transfer the brewed coffee into the portable coffee box (insulated airpot/dispenser) and ensure the dispenser is sealed and labeled 'HOT'.

- 6
Place included disposable cups, lids, stirrers, sugar packets, and creamer cups next to the coffee box for self-service. Stack cups so the top cup is exposed for easy pick-up. Keep lids and stirrers arranged nearby.
- 7
Provide a small sign or label indicating 'Freshly Brewed Coffee - Hot' and a reminder to use lids. Offer 8 servings (8 oz each) from this batch; refill cups as needed until coffee volume is exhausted.
Optional Add-ins
- 8
If guests request flavored coffee, offer ground cinnamon (up to 1/4 tsp per cup) or vanilla syrup (about 7.5 ml / 1/4 oz per cup) so they can add to taste. For consistent flavoring, provide a pump or measured pourer for syrup.
