Aquavit Cured Salmon Preparation

Cure the Salmon
In a bowl, mix together the aquavit, sea salt, brown sugar, and chopped fresh dill. Place the Kvaroy Norwegian salmon in a shallow dish and pour the cure mixture over it, ensuring the salmon is well coated. Cover with plastic wrap and refrigerate for at least 24 hours.

Prepare the Fingerling Potatoes
Boil the fingerling potatoes in salted water until tender, about 15-20 minutes. Drain and set aside to cool, then slice them in half.

Blanch the Haricot Verts
In a pot of boiling water, blanch the haricot verts for 3-4 minutes until bright green and tender-crisp. Drain and immediately place them in an ice bath to stop the cooking process. Drain again and set aside.

Assemble the Salad
On a large platter, arrange the organic baby greens as a base. Top with halved fingerling potatoes, blanched haricot verts, boiled egg halves, sliced radishes, Nicoise olives, and halved cherry tomatoes. Finally, flake the aquavit cured salmon over the top and sprinkle with fried capers.

Dress the Salad
Drizzle the olive oil and lemon juice over the assembled salad. Season with salt and pepper to taste.
