    Soak the Rice Noodles

    In a large bowl, soak the rice noodles in warm water for about 20 minutes or until they become soft. Drain and set aside.

    Prepare the Vegetables

    While the noodles are soaking, chop the broccoli into small florets, slice the shiitake mushrooms, julienne the carrot, and thinly slice the green onion and purple cabbage.

Cooking

    Stir Fry the Vegetables

    In a large skillet or wok, heat the sesame oil over medium-high heat. Add the broccoli, shiitake mushrooms, carrots, and purple cabbage. Stir fry for about 5-7 minutes until the vegetables are tender but still crisp.

    Add the Noodles

    Add the soaked rice noodles to the skillet with the vegetables and toss to combine.

    Make the Sauce

    In a small bowl, whisk together the soy sauce, finely chopped lemongrass, and chili paste. Pour this sauce over the noodles and vegetables in the skillet, tossing everything together to coat evenly.

Peanut Drizzle

    Prepare the Peanut Drizzle

    In a small bowl, mix the peanut butter, water, soy sauce, and lime juice until smooth. Adjust the consistency with more water if needed.

    Plate the stir-fried noodles and drizzle the peanut sauce over the top. Garnish with sliced green onions and serve warm.
