Method

Roasted Chickpeas

    Preheat and Prepare

    Preheat your oven to 400°F (200°C). Rinse and drain the canned chickpeas, then pat them dry with a paper towel.

    Season the Chickpeas

    In a mixing bowl, combine the chickpeas, olive oil, cumin powder, paprika, salt, and black pepper. Toss well to coat the chickpeas evenly.

    Roast the Chickpeas

    Spread the seasoned chickpeas in a single layer on a baking sheet. Roast for 25-30 minutes until they are crispy and golden, stirring halfway through.

Braised Green Cabbage

    Sauté Onions and Garlic

    In a large skillet, heat olive oil over medium heat. Add the sliced onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.

    Cook Cabbage

    Add the chopped green cabbage to the skillet. Stir well, then pour in the vegetable broth. Season with salt and black pepper. Cover and simmer for about 15 minutes, stirring occasionally, until the cabbage is tender.

Spicy Curry

    Combine Ingredients

    In a saucepan over medium heat, combine the coconut milk, curry powder, grated ginger, chili powder, and salt. Stir well to combine.

    Simmer the Curry

    Bring the mixture to a gentle simmer, then reduce the heat to low. Allow it to cook for 10-15 minutes, stirring occasionally. Add the chopped cilantro before serving.

Purple Rice

    Rinse the Rice

    Rinse the purple rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a pot, combine the rinsed purple rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 40-45 minutes until the rice is tender and the water is absorbed.

Spinach Puree

    Blanch the Spinach

    In a pot of boiling water, add the fresh spinach and blanch for 1-2 minutes until wilted. Drain and rinse under cold water to stop cooking.

    Blend into Puree

    In a blender, combine the blanched spinach, water, and salt. Blend until smooth and creamy. Adjust seasoning to taste.
