Preparation of Braised Pork or Jackfruit

    Braised Pork Preparation

    If using braised pork, season the pork with salt, pepper, and your choice of spices. In a large pot, sear the pork on all sides over medium-high heat. Add chopped onions, garlic, and a bit of broth. Cover and let it simmer for 2-3 hours until tender.

    Jackfruit Preparation

    If using jackfruit, drain and rinse the jackfruit pieces. In a skillet, sauté onions and garlic in a little oil until soft. Add jackfruit, spices, and a splash of vegetable broth. Cook for about 20 minutes, shredding the jackfruit as it cooks.

Cooking the Rice and Beans

    Rice Cooking

    Rinse the rice under cold water until the water runs clear. In a medium saucepan, combine rice with double the amount of water (400 ml) and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until water is absorbed.

    Black Beans Preparation

    If using canned black beans, simply rinse and drain them. In a saucepan, heat a little oil, add minced garlic, and cook until fragrant. Add black beans, season with salt, and simmer for 10-15 minutes.

Cooking Plantains

    Fried Plantains

    Peel the plantains and slice them diagonally into 1-inch pieces. In a skillet, heat oil over medium heat. Fry the plantain slices until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.

Cooking Arepas and Eggs

    Arepa Preparation

    In a bowl, combine arepa flour with water and a pinch of salt. Mix until a smooth dough forms. Shape into disks and cook on a hot griddle for about 5 minutes on each side until golden brown.

    Egg Preparation (optional)

    If you choose to add eggs, fry or scramble the eggs in a skillet until cooked to your liking.
