Steak

Smashed Fingerling Potatoes

Grilled Asparagus

Method

Steak

  1. 1

    Prepare the Steak

Rub the Denver steak with olive oil, salt, and pepper on both sides.

  2. 2

    Grill the Steak

Preheat the grill to medium-high. Grill the steak for about 5-7 minutes on each side for medium-rare, or until your desired doneness. Remove from grill and let it rest for 5 minutes before slicing.

Gremolata

  1. 3

    Make the Gremolata

In a small bowl, combine chopped parsley, minced garlic, lemon zest, and olive oil. Mix well and set aside.

Smashed Fingerling Potatoes

  1. 4

    Cook the Potatoes

Boil the fingerling potatoes in salted water until tender, about 15-20 minutes. Drain and let cool slightly.

  2. 5

    Smash and Season

Once the potatoes are cool enough to handle, gently smash them with the palm of your hand. Drizzle with olive oil, sprinkle with salt, pepper, and chopped chives. Toss gently to combine.

Grilled Asparagus

  1. 6

    Prepare the Asparagus

Trim the woody ends off the asparagus spears. Toss them with olive oil, salt, and pepper.

  2. 7

    Grill the Asparagus

Grill the asparagus for about 4-5 minutes, turning occasionally, until they are tender and slightly charred.
