Crust
- 1
Prepare the crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the crumbs are evenly coated.
- 2
Form the crust
Press the mixture into the bottom and up the sides of a 9-inch pie pan. Use the back of a measuring cup or your fingers to ensure it's compact.
- 3
Bake the crust
Bake the crust in the preheated oven for 8-10 minutes or until lightly golden. Remove from oven and let it cool while you prepare the filling.
Filling
- 4
Mix the filling ingredients
In a large mixing bowl, whisk together the key lime juice, sweetened condensed milk, and egg yolks until smooth and well combined.
- 5
Fill the crust
Pour the key lime filling into the cooled graham cracker crust, spreading it out evenly.
- 6
Bake the pie
Return the pie to the oven and bake for an additional 10-15 minutes, or until the filling is set but still slightly jiggly in the center. Remove from oven and let it cool to room temperature.
- 7
Chill the pie
Once cooled, refrigerate the pie for at least 3 hours, or until thoroughly chilled.
Topping
- 8
Prepare the whipped cream
In a medium bowl, beat the heavy whipping cream and powdered sugar with a hand mixer on medium speed until soft peaks form.
- 9
Top the pie
Spread the whipped cream evenly over the top of the chilled key lime pie. Sprinkle lime zest on top for garnish.
- 10
Serve
Slice the pie and serve it chilled. Enjoy the refreshing tartness of your homemade Key Lime Pie!
