Lavender Syrup

Make the syrup
Combine 1 cup water and 1 cup granulated sugar in a small saucepan over medium heat. Stir until the sugar dissolves and the mixture comes to a gentle simmer.

Infuse lavender
Add 2 tablespoons dried culinary lavender buds to the simmering syrup. Reduce heat to low and let the mixture gently simmer for 5 minutes, stirring occasionally to keep the sugar dissolved.

Steep
Remove the pan from heat, cover, and let the lavender steep in the syrup for 15 minutes to build flavor without becoming overly perfumed or bitter.

Strain and finish
Strain the syrup through a fine mesh sieve or cheesecloth into a heatproof container to remove the lavender buds. Stir in 1/2 teaspoon vanilla extract if using. Let cool to room temperature, then refrigerate in a sealed jar. Syrup keeps up to 2 weeks refrigerated.
Prepare Coffee / Espresso

Brew two shots of espresso (about 60 ml total) or make 1/2 cup of very strong brewed coffee. Pour the espresso/coffee into your serving cup and set aside.
Froth and Heat Milk

Pour 1 cup milk into a small saucepan and warm over medium-low heat until steaming but not boiling (about 150°F / 65°C). Alternatively, heat in the microwave for 45–60 seconds until hot.

Froth the warmed milk using a milk frother, French press, or by vigorously whisking to create microfoam. If you want extra foam, reserve 1/4 cup milk, froth it separately, and spoon the foam on top.
Assemble Lavender Latte

Add lavender syrup to the espresso: measure 1 to 1 1/2 tablespoons of lavender syrup per serving (adjust to taste) into the cup with espresso. Stir to dissolve and combine.

Slowly pour the steamed milk into the espresso and syrup mixture, holding back foam with a spoon. Pour gently to create a layered, even latte.

Taste and adjust: if you prefer sweeter or stronger lavender flavor, add another 1/2 tablespoon syrup and stir. Serve immediately.
