    Prepare fruit

    Wash all citrus under cool running water. Roll the blood oranges and the additional orange on the counter while pressing gently to loosen juices. Cut each blood orange and the extra orange in half crosswise. Cut the lemon in half and set aside.

    Extract juice

    Using a citrus juicer (manual or electric), juice the blood oranges and the extra orange into a bowl or measuring cup. Juice the lemon, but only add half the lemon juice to the mix initially — reserve the other half to adjust brightness at the end. Strain the combined juice through a fine-mesh sieve into a clean pitcher to remove pulp and seeds for a smooth artisanal nectar.

    Make simple syrup

    In a small saucepan combine 3 tablespoons granulated sugar and 3 tablespoons water. Warm over low heat, stirring until the sugar dissolves completely. Remove from heat and let cool to room temperature. (Alternatively, use an equal amount of agave or honey if preferred; whisk well to combine.)

    Sweeten juice

    Stir the cooled simple syrup into the strained blood orange juice. Taste and adjust: add the reserved lemon juice if more brightness is needed. If the blood orange is very tart, add up to 1 additional tablespoon of simple syrup.

    Dilute and balance

    If the juice is too intense, stir in up to 1 cup cold water, a little at a time, until you reach the desired strength. Add a tiny pinch of fine sea salt to round flavors and enhance sweetness (optional). Chill in refrigerator for at least 30 minutes or serve immediately over ice.

    Serve

    Fill glasses with ice (about 1/2–1 cup per serving). Pour the blood orange nectar over ice. Garnish each glass with a sprig of mint or a thin wheel of blood orange if desired. Stir briefly and serve cold.

    Storage

    Store any leftover nectar in a sealed container in the refrigerator for up to 48 hours. Shake or stir before serving, as natural separation may occur.
