    Chill the glass

    Place a coupe or martini glass in the freezer for 5–10 minutes, or fill with ice water and set aside while you prepare the cocktail.

    Measure and combine

    Fill a mixing glass or cocktail shaker halfway with ice (about 1 cup). Add 2 oz gin, 0.5 oz dry vermouth, 1 dash Angostura bitters, and 1 dash orange bitters.

    Stir

    Using a bar spoon, stir the mixture briskly for 20–30 seconds (about 20–30 rotations) until well chilled and slightly diluted. Aim for a temperature of about 10–12°C (50–54°F) if you have a thermometer.

    Prepare the glass

    If you used ice water to chill the glass, dump it now. Strain the stirred cocktail through a julep or fine strainer into the chilled coupe or martini glass.

    Garnish

    Express the lemon peel over the drink by holding it skin-side down above the glass and giving it a short twist to release oils. Run the peel around the rim, then drop it into the cocktail as garnish.

    Serve immediately while cold.
