Brisket Preparation

    Prepare the Brisket

    Trim excess fat from the brisket, leaving about 1/4 inch of fat for flavor.

    Apply the Rub

    Generously coat the brisket with the brisket rub, ensuring it covers all sides. Let it sit at room temperature for 30 minutes.

    Prepare the Smoker

    Soak the wood chips in water for at least 30 minutes. Preheat the smoker to 225°F (107°C).

    Smoke the Brisket

    Place the brisket in the smoker and add the soaked wood chips. Smoke for about 1.5 hours per pound until the internal temperature reaches 195°F (90°C).

    Rest the Brisket

    Remove the brisket from the smoker and wrap it in foil. Let it rest for at least 30 minutes before slicing.

    Make the Coleslaw

    In a large bowl, combine the coleslaw mix with your favorite dressing. Mix well and refrigerate for at least 30 minutes before serving.
