Chop the onion, celery, green bell pepper, and garlic finely. Set aside.

Cook the Boudin

In a large pot, cook the boudin sausage over medium heat until browned, about 5-7 minutes. Remove from the pot and set aside, leaving the rendered fat.

Sauté the Vegetables

In the same pot, add olive oil if necessary, then add the chopped onion, celery, and green bell pepper. Sauté until the vegetables are tender, about 5-7 minutes. Add the minced garlic and cook for an additional 1-2 minutes.

Add the chicken broth, rice, bay leaves, salt, black pepper, and paprika to the pot with the sautéed vegetables. Stir well.

Slice the cooked boudin sausage into rounds and add it back into the pot. Stir to combine.
