Turkey Preparation

Preheat your oven to 325°F (165°C).

Remove the turkey from its packaging and pat it dry with paper towels.

Rub the turkey inside and out with olive oil, ensuring even coverage.

Season the turkey generously with salt and black pepper.

Chop the fresh rosemary and thyme, then sprinkle them inside the cavity along with crushed garlic cloves and the whole lemon.

Truss the turkey legs together using kitchen twine for even cooking.

Place the turkey on a roasting rack in a large roasting pan.

Insert a meat thermometer into the thickest part of the thigh, avoiding the bone.

Roast the turkey in the preheated oven for about 13-15 minutes per pound, or until the internal temperature reaches 165°F (74°C).

Baste the turkey every 30 minutes with its own juices for a golden skin.
Gravy Preparation

Once the turkey is done, remove it from the oven and let it rest for at least 30 minutes before carving.

While the turkey is resting, make the gravy. Pour the turkey drippings from the roasting pan into a measuring cup.

In a saucepan over medium heat, whisk together the drippings and all-purpose flour until smooth.

Gradually add the chicken broth, continuing to whisk until the mixture thickens.

Season the gravy with salt and black pepper to taste.
