Dough Preparation
Mix the Dough
In a mixing bowl, combine 2 cups of all-purpose flour and 1 tsp of salt. Gradually add 3 tbs of water while mixing until a rough dough forms.
Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until the dough is smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.
Filling Preparation
Prepare the Filling
In a large bowl, combine 1 lb of ground pork, 3 finely chopped green onions, 2 minced garlic cloves, 1 tsp of grated ginger, 2 tbs of soy sauce, 1 tbs of sesame oil, 1 tsp of salt, and 1 tsp of pepper. Mix well until all ingredients are fully incorporated.
Dumpling Assembly
Roll the Dough
After the dough has rested, divide it into small pieces and roll each piece into a thin circle (about 3 inches in diameter) on a floured surface.
Fill the Dumplings
Place about 1 tbsp of the pork filling in the center of each dough circle. Fold the dough over to create a half-moon shape and pinch the edges to seal tightly.
Cooking
Steam the Dumplings
Prepare a steamer or a pot with a steaming rack. Bring water to a boil. Arrange the dumplings in the steamer, making sure they are not touching each other. Cover and steam for 15-20 minutes until the pork is cooked through.
