Prepare the Pork Belly
Start by trimming any excess fat from the pork belly, leaving about 1/4 inch of fat for rendering. Cut the pork belly into 1-inch cubes.

Season the Pork
In a large bowl, combine the cubed pork belly with salt, pepper, and garlic powder. Mix thoroughly to ensure all pieces are well-coated with the seasoning.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature for accuracy.

Fry the Pork
Carefully add the seasoned pork belly cubes to the hot oil in batches. Fry for about 8-10 minutes per batch, or until the cracklins are golden brown and crispy. Stir occasionally to ensure even cooking.

Drain and Cool
Using a slotted spoon, remove the cracklins from the oil and place them on a paper towel-lined plate to drain excess oil. Allow them to cool slightly before serving.
