Boudin Balls Preparation

Combine Ingredients
In a large mixing bowl, combine the pork boudin sausage, cooked rice, chopped green onions, breadcrumbs, eggs, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.

Form Balls
Using your hands, take a portion of the mixture (about 2 tablespoons) and roll it into a ball. Repeat this process until all the mixture is formed into balls. Place the balls on a tray.

Heat Oil
In a large skillet or deep fryer, heat the oil over medium heat until it reaches 350°F (175°C).

Fry Boudin Balls
Carefully place the boudin balls in the hot oil, making sure not to overcrowd the pan. Fry them for about 4-5 minutes or until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.

Mix Aioli Ingredients
In a small bowl, combine the mayonnaise, minced garlic, lemon juice, and Sriracha sauce. Stir until smooth and well blended.

Taste the aioli and season with salt and black pepper to your preference. Mix well and set aside.
