Prepare the Marinade
In a large bowl, combine soy sauce, brown sugar, gochujang, sesame oil, minced garlic, grated ginger, chopped green onions, and black pepper. Whisk until the ingredients are well blended and the sugar is dissolved.

Marinate the Pork
Place the pork shoulder or pork belly in a resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it's evenly coated. Seal the bag or cover the dish, and refrigerate for at least 4 hours, preferably overnight for maximum flavor.

Preheat the Grill
Preheat your grill to medium-high heat (about 375°F to 400°F or 190°C to 200°C).

Grill the Pork
Remove the pork from the marinade, allowing excess marinade to drip off. Place the pork on the grill and cook for about 5-7 minutes on each side, or until a nice char is formed and the internal temperature reaches 145°F (63°C).

Rest and Slice
Once cooked, remove the pork from the grill and let it rest for 5 minutes. Slice the pork against the grain into thin pieces.
