Preparation
Prepare the Pork
Trim excess fat from the pork shoulder and pork belly. Cut both into large chunks.
Make the Spice Rub
In a bowl, combine salt, black pepper, paprika, cumin, garlic powder, onion powder, brown sugar, and chili powder. Mix well.
Season the Pork
Rub the spice mixture all over the pork chunks, ensuring they are evenly coated.
Cooking
Sear the Pork
In a large skillet or Dutch oven, heat 2 tablespoons of oil over medium-high heat. Add the seasoned pork chunks and sear on all sides until brown. Remove and set aside.
