Method

Preparation

1

Preheat the Oven

Preheat your oven to 425°F (220°C) and prepare two ramekins by greasing them with butter and dusting with flour.

2

Melt Chocolate and Butter

In a microwave-safe bowl, combine the bittersweet chocolate and unsalted butter. Microwave in 30-second intervals, stirring between each, until melted and smooth.

3

Mix Eggs and Sugar

In a separate mixing bowl, whisk together the large eggs, large egg yolk, and granulated sugar until the mixture is pale and slightly thickened.

4

Combine Mixtures

Pour the melted chocolate mixture into the egg mixture, adding the vanilla extract. Stir until well combined.

5

Incorporate Flour and Salt

Sift the all-purpose flour and salt into the chocolate mixture and fold gently until just combined. Do not overmix.

6

Fill Ramekins

Divide the batter evenly between the prepared ramekins, filling each about 3/4 full.

Baking

7

Bake the Cakes

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

8

Cool and Serve

Remove the ramekins from the oven and let them cool for 1 minute. Carefully invert each ramekin onto a plate, tapping gently to release the cake. Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream.
