Preparing the Wrappers

    Soak the Rice Paper

    Fill a shallow dish with warm water. Dip one rice paper wrapper into the warm water for about 10-15 seconds or until it becomes soft and pliable. Remove from water and let drain on a clean surface.

Making the Filling

    Prepare the Vegetables

    While the wrappers are soaking, prepare the filling by julienning the carrot and cucumber, slicing the bell pepper, and shredding the red cabbage. Chop the mint and cilantro leaves, and tear the lettuce leaves into smaller pieces.

Rolling the Spring Rolls

    Assemble the Spring Rolls

    Once the rice paper wrapper is soft, lay it flat on the surface. Place a small amount of each filling ingredient (carrot, cucumber, bell pepper, red cabbage, mint, cilantro, and lettuce) in the center of the wrapper. Be careful not to overfill.

    Roll the Wrapper

    Fold the sides of the wrapper over the filling, then starting from the bottom, roll up tightly to enclose the filling. Repeat the process for the remaining wrappers and filling.
