Preparing the Salmon

Marinate the Salmon
In a small bowl, mix olive oil, lemon juice, minced garlic, salt, and black pepper. Pour this marinade over the salmon fillets in a shallow dish. Cover and refrigerate for at least 30 minutes.

Preheat the Grill
While the salmon is marinating, preheat your grill to medium-high heat (about 375°F to 400°F).

Prepare the Vegetables
Wash and trim the asparagus, slice the bell peppers into strips, and slice the zucchini into rounds.

Roast the Vegetables
In a large bowl, toss the prepared vegetables with olive oil, salt, and black pepper. Spread them out evenly on a baking sheet.

Cook the Vegetables
Place the baking sheet in the oven and roast at 425°F (220°C) for about 20 minutes, or until the vegetables are tender and slightly charred.

Once both the salmon and vegetables are cooked, plate one salmon fillet with a generous serving of the roasted seasonal vegetables on the side.
