Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a small bowl, mix olive oil, lemon juice, minced garlic, salt, and black pepper. Pour this marinade over the salmon fillets in a shallow dish. Cover and refrigerate for at least 30 minutes.

  2. 2

    Preheat the Grill

While the salmon is marinating, preheat your grill to medium-high heat (about 375°F to 400°F).

  3. 3

    Grill the Salmon

Once the grill is hot, place the marinated salmon fillets on the grill skin-side down. Grill for about 6-8 minutes on each side, or until the salmon flakes easily with a fork.

Preparing the Vegetables

  1. 4

    Prepare the Vegetables

Wash and trim the asparagus, slice the bell peppers into strips, and slice the zucchini into rounds.

  2. 5

    Roast the Vegetables

In a large bowl, toss the prepared vegetables with olive oil, salt, and black pepper. Spread them out evenly on a baking sheet.

  3. 6

    Cook the Vegetables

Place the baking sheet in the oven and roast at 425°F (220°C) for about 20 minutes, or until the vegetables are tender and slightly charred.

Serving

  1. 7

    Plate the Dish

Once both the salmon and vegetables are cooked, plate one salmon fillet with a generous serving of the roasted seasonal vegetables on the side.

  2. 8

    Garnish and Serve

Optionally, garnish with fresh herbs like parsley or dill, and serve immediately.
