Method
Preparation
- 1
Preheat the Oven
Preheat your oven to 425°F (220°C).
- 2
Prepare Ramekins
Grease four ramekins with butter and dust with flour to prevent sticking. Place them on a baking tray.
Making the Batter
- 3
Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a double boiler or in the microwave in 30-second intervals until smooth.
- 4
Mix Sugar, Eggs, and Vanilla
In a separate bowl, whisk together the granulated sugar, large eggs, and vanilla extract until well combined and slightly frothy.
- 5
- 6
Add Flour and Salt
Sift the all-purpose flour and salt into the mixture. Fold gently until just combined, being careful not to overmix.
Baking
- 7
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
- 8
Bake
Bake in the preheated oven for 12-14 minutes. The edges should be firm, but the center should still be soft.
Serving
- 9
Cool and Unmold
Let the cakes cool for 1 minute before carefully inverting them onto plates.
- 10
Garnish
Dust with powdered sugar, and serve warm with a scoop of vanilla ice cream and fresh berries, if desired.
